
A CSA is like a gift box of menus just waiting to be prepared. With my first peek in the box every Wednesday I have several dinners planned without ever setting foot in a farmers market or store -- the best part is that someone picks this beautiful produce for me, and I don't exuberantly buy more than I need! -- and I love the challenge of creating with whatever seasonal produce I receive. Tonight was Vegetable Enchiladas filled with a quick saute of sweet yellow onions, summer squash, flamingo peppers and black beans seasoned with cumin, ancho and regular chili powders and fresh garlic. Roll in soft tortillas, top with a tomatillo salsa (made with my neighbor's tomatillos) and a sprinkling of Cheddar cheese, then baked until heated through. A perfectly de-stressing meal.
